Quesadillas Recipes

Classic Chicken Quesadilla

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • Salsa, sour cream, and guacamole for serving

Instructions:

  1. Season the chicken breasts with chili powder, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken until fully cooked, about 6-7 minutes per side. Remove from heat and let rest for a few minutes before slicing thinly.
  3. In the same skillet, sauté the diced bell peppers and onions until tender.
  4. Lay a tortilla flat and sprinkle half with cheese. Add sliced chicken, sautéed peppers and onions, and cilantro. Sprinkle more cheese on top and fold the tortilla in half.
  5. Cook the quesadilla in the skillet over medium heat until the cheese is melted and the tortilla is golden brown, about 3 minutes per side.
  6. Slice into wedges and serve with salsa, sour cream, and guacamole.

Veggie Quesadilla

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup diced zucchini
  • 1/2 cup diced bell peppers
  • 1/2 cup corn kernels
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Salsa and sour cream for serving

Instructions:

  1. Heat olive oil in a skillet over medium heat. Sauté the mushrooms, zucchini, bell peppers, and corn until tender. Season with salt and pepper.
  2. Lay a tortilla flat and sprinkle half with cheese. Add the sautéed vegetables and cilantro. Sprinkle more cheese on top and fold the tortilla in half.
  3. Cook the quesadilla in the skillet over medium heat until the cheese is melted and the tortilla is golden brown, about 3 minutes per side.
  4. Slice into wedges and serve with salsa and sour cream.

Shrimp Quesadilla

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • Lime wedges, salsa, and sour cream for serving

Instructions:

  1. Season the shrimp with chili powder, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook the shrimp until pink and opaque, about 2-3 minutes per side. Remove from heat and chop into bite-sized pieces.
  3. In the same skillet, sauté the diced bell peppers and onions until tender.
  4. Lay a tortilla flat and sprinkle half with cheese. Add the cooked shrimp, sautéed peppers and onions, and cilantro. Sprinkle more cheese on top and fold the tortilla in half.
  5. Cook the quesadilla in the skillet over medium heat until the cheese is melted and the tortilla is golden brown, about 3 minutes per side.
  6. Slice into wedges and serve with lime wedges, salsa, and sour cream.
